Reineta Ceviche

Ingredients:

  • 500 grams of fresh reineta (kingfish), cut into small cubes
  • 4 lemons, juiced (about 1 cup of lemon juice)
  • 1 red onion, sliced thin
  • 1 red bell pepper, diced
  • 1/2 cup of fresh cilantro, chopped
  • 1 tomato, diced
  • 1 garlic clove, chopped
  • 1 green chili (optional), finely chopped
  • Salt and pepper to taste
  • Lettuce leaves, for serving
  • Lemon slices, for garnish

Instructions:

  1. In a large bowl, place the reineta cubes and pour the lemon juice over the fish. Make sure all the fish cubes are completely covered with the lemon juice. Let it marinate in the refrigerator for at least 30 minutes, or until the fish is cooked in the lemon juice (the flesh of the fish will turn opaque).
  2. Meanwhile, in another bowl, mix the sliced red onion, diced red bell pepper, chopped fresh cilantro, diced tomato, chopped garlic, and finely chopped green chili, if you're using it.
  3. Once the reineta is cooked in the lemon juice, drain the excess liquid and add the marinated fish to the bowl with the chopped vegetables. Mix well to combine all the ingredients.
  4. Taste and adjust the seasoning with salt and pepper to your liking.
  5. Serve the ceviche on individual plates, on top of lettuce leaves, and garnish with additional lemon slices.
  6. Enjoy this refreshing and flavorful ceviche as an appetizer or main dish on any occasion!
