Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the quinoa is tender and the liquid has been fully absorbed. Remove from the heat and let it rest, covered, for 5 minutes before uncovering and fluffing with a fork.<\/li><li>Meanwhile, prepare the vegetables for roasting. Place the zucchini slices, eggplant cubes, red bell pepper strips, and thin slices of red onion on a baking sheet. Drizzle with olive oil and season with salt and pepper to taste.
