4 large potatoes, peeled and cut into cubes
2 large carrots, peeled and cut into cubes
1 large onion, chopped
2 garlic cloves, chopped
1 cup of peas (fresh or frozen)
1 cup of corn kernels
2 green bell peppers, cut into cubes
2 hard-boiled eggs, sliced (optional)
2 tablespoons of vegetable oil
1 teaspoon of ground cumin
Salt and pepper to taste

Instructions:

Cover the pot and cook over medium-low heat for about 30-40 minutes, or until the vegetables are tender and cooked.
Once the vegetables are cooked, adjust the seasoning if necessary and remove the pot from the heat.
If desired, serve the charquicán hot, garnishing each plate with slices of hard-boiled egg and chopped fresh parsley.
