Sugar-Free Oatmeal and Banana Cookies

Ingredients:

  • 2 ripe bananas
  • 1 cup of oats (you can use traditional oats or ground oats)
  • 1/2 teaspoon of ground cinnamon (optional)
  • A pinch of salt
  • 1/4 cup of chopped walnuts (optional)
  • 1/4 cup of raisins (optional)
  • Coconut oil (or butter) to grease the baking sheet (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F). Lightly grease a baking sheet with coconut oil or butter if needed, or use parchment paper to prevent the cookies from sticking.

  2. In a large bowl, mash the bananas with a fork until smooth and lump-free.

  3. Add the oats, cinnamon, and a pinch of salt to the mashed bananas. Mix well until all ingredients are combined.

  4. If desired, you can add the chopped walnuts and raisins to the mixture and mix again to distribute evenly.

  5. With a spoon, place dollops of dough onto the prepared baking sheet, spacing them evenly.

  6. Use the back of the spoon or your fingers to gently flatten each dollop of dough and form cookies of the desired thickness.

  7. Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden at the edges.

  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a rack to cool completely.

  9. Once cooled, enjoy these delicious sugar-free banana oat cookies as a nutritious and satisfying snack or dessert!
